How the ice is made
Water is run over a cold surface and freezes layer by layer. Building the sphere in layers is what excludes the trapped air and dissolved gas that cloud ordinary ice, so what leaves the machine is clear all the way through rather than clear only at the edges. A precision defrost cycle releases each sphere without deforming it, which is what keeps shape and size consistent from the first sphere of the day to the last.
Storage and daily use
Finished spheres move into a temperature-controlled compartment that holds 48. The compartment rotates them periodically so they neither mark nor freeze to one another — the reason ice can sit for hours and still reach the glass looking as it did when it was made. Because the store holds 48 and the machine makes approximately 104 a day, spheres need to be drawn off through the day for production to continue at full rate. Most operations move a tray into the freezer during quiet hours and bring it back out at service.
Installation requirements
A dedicated 20-amp 115V circuit, a 3/4 inch water supply and a 1/2 inch drain. The cabinet is 40.7 inches tall, 36 inches wide and 24 inches deep (27" overall including handles). See installation views for clearances and placement.
